A system has been developed that profiles farms according to their economic profitability. The system has identified three groups on the basis of the percentages of pigs processed on-farm. Producing, processing and selling local farm-produced products generates an economic activity that adds value to the quality of the product and the expertise of the farmer, offering higher sale prices that are also independent of market fluctuations. However, the production process has to be fully controlled in order to guarantee constant food quality, attract customers and secure that first purchase, as a prerequisite to generating repeat business and running this diversification system. The mean EBITDA of this sample population, not counting family benefits, is 2.43 €/kg carcass.
