This more traditional production technique totals around 7.5 million pigs produced per year. The valuation in terms of hams alone represents 50% of the total carcass value. The basic price of the livestock breeders’ compensation is determined on a weekly basis and refers to a category R basic price for a liveweight of 160 kg. Additional increments are added to this basic price and are determined for the year through a contract signed between breeder and abattoir.
