In 1999, 3.8 millions pigs, reared in 2 600 farms, were produced under official quality schemes in France. This represented 16.5% of the national production.In France there are 13 different « labels » for premium quality pork and 17 quality assurance programs for fresh meat.The quality criteria used are established by specialized groups which are themselves controlled by 18 independent organizations, certified by the government.The cooperatives play a key role in the development of the criteria used in these programs.The government is responsible for the overall quality policy.
