Alternative pig farm buildings in Germany: technical choices, production costs and marketing of pigs - video IFIP

In response to societal demand for improved animal welfare, the number of pig farm buildings that provide pigs with more room, straw, differentiated living areas and even access to the open air is increasing in Germany. This makes it possible to acquire technical and economic references of these alternative production modes. Faced with the dramatic economic situation for conventional pig production, the promoters of these projects see in animal welfare a hope for added value and guaranteed removal. In 2019, German retailers agreed on common labelling of the production method, the “Haltungsform” (HF), with four levels: 1 = standard building, 2 = improved building, 3 = access to the open air, 4 = organic or equivalent. In a context of strong political pressure, Aldi North and South even announced in 2021 that they wanted to stop selling, by 2030, fresh meat from pigs raised without access to the open air (levels 1 and 2 of HF). In 2021, the percentage of pigs produced in levels 3 and 4 of HF was less than 2 %, but approximately 25 marketing channels have been created, including Wertschätze from Kaufland (3,200 pigs/week) and Bauernliebe from Edeka Rhin-Ruhr (1,500) in level 3, Hofglück from Edeka southwest (1,600) and Fair&Gut from Aldi (1,500) in level 4. From a summary of the existing literature, mainly in German, this article describes the technical choices, costs of production and marketing channels (short supply chains, welfare programmes, contracts) of these very alternative farms that provide fattening pigs access to the open air.

Bâtiments d’élevage de porcs alternatifs en Allemagne : choix techniques, coûts de revient et valorisation des porcs

En réponse aux demandes d’amélioration du bien-être animal, le nombre de bâtiments d'élevage de porcs offrant plus de surface, de la paille, des zones de vie différenciées et même un accès à l’air libre augmente en Allemagne permettant d’acquérir des références techniques et économiques. Face à la situation économique dramatique pour la production conventionnelle de porcs, les porteurs de ces projets voient dans le bien-être animal un espoir de plus-values et de garantie d’enlèvement. En 2019, les distributeurs allemands se sont quant à eux accordés sur un étiquetage commun du mode de production, le Haltungsform (HF), en quatre niveaux : 1 = bâtiment standard, 2 = bâtiment amélioré, 3 = accès à l’air libre, 4 = bio ou équivalent. Dans un contexte de forte pression politique, Aldi Nord et Sud ont même annoncé en 2021 vouloir renoncer, d’ici 2030, à la viande fraîche issue de porcs élevés sans accès à l’air libre (niveaux 1 et 2). En 2021, la part des porcs produits dans les niveaux 3 et 4 du HF est inférieure à 2 % mais environ 25 filières de commercialisation ont été créées, dont Wertschätze de Kaufland (3 200 porcs /semaine) et Bauernliebe d’Edeka Rhin-Ruhr (1 500) en niveau 3, Hofglück d’Edeka sud-ouest (1 600) et Fair&Gut d’Aldi (1 500) en niveau 4. A partir d’une synthèse de la littérature existante, principalement en allemand, cet article décrit les choix techniques, les coûts de revient et les modalités de valorisation (circuits courts, programmes bien-être, contrats) de ces élevages très alternatifs, offrant un accès à l’air libre aux porcs à l’engrais.
