In this study, most firms used a catheter to collect blood. Blood thus obtained complied with the micro-biological criteria set by legislation in 59% of cases. All the results obtained from buffer tanks and food-grade blood complied with the law of 10 February 1984. The traceability system operated in all the processing facilities. The complexity of the collection and transfer systems did not permit full control of cleaning and disinfecting.
