While Regulation (EC) 2017/1981 permits the transport of carcasses at exceptional temperatures (between 7°C and 15°C at core, it does not take into account the practices of the cattle (BV) and pork (PC) sectors in multiload transports [ML transport with derogated carcasses or/and carcasses at regulatory temperature ] (progressive loading of trucks with carcasses/quarters in several sites) or multiproduct [MP] (loading with carcasses at derogatory temperatures and cutting products or offal at regulatory temperatures in the same truck). In the framework of European negotiations, Culture Viande has requested IFIP and the Livestock Institut to conduct an experimental study to evaluate the impact of transports of derogated carcasses in the context ML for cattle and MP for pigs and cattle. The objective of the study was to record reliable and representative data on this type of transport with exempted carcasses, and then to assess the impact of these temperatures on the growth potential of meat hygiene indicator bacteria (modelisation with Symprevius tool).
